Recommended wine & cheese pairings by Mark & Caroline Morrish - Banham Open Air Dairy Cheddar | Funkstille Zweigelt The Cheese: This beautiful, creamy, full-flavoured cheddar comes from the Open Air Dairy in Littlebredy – a unique large-scale dairy farm in Dorset that milks cows in the field as they graze. Tom Foot and Neil Grigg produce exceptional milk from pasture-fed cows using mobile milking parlours. The result? A traditional Dorset cheddar with real depth and character. Shop Open Air Dairy Cheddar The Wine: Funkstille Zweigelt is Austria’s signature red grape, and this one is particularly lovely – plummy fruit with a distinctive black pepper spice running through it. Why They Work Together: The creamy richness of this cheddar needs a wine with personality, and the peppery, plummy notes of Zweigelt cut through the richness beautifully while complementing the cheese’s savoury depth. It’s proper artisan cheesemaking with serious attention to detail. Shop Ismay Brie The Wines: We’ve suggested two beautiful English wines from our local Furleigh Estate. The Bacchus Dry brings gooseberry and elderflower, while the Dorset Idyll offers honeyed citrus. Why They Work Together: Brie’s textured creaminess and mushroomy character create a backdrop for Bacchus’s gooseberry brightness – the flavours complement together beautifully. Made at Woodbridge Farm using a 300-year-old recipe with hand-skimmed milk from Holstein-Friesian cows, it’s exceptionally creamy with a mellow blue taste and flavoursome edible rind. This is blue cheese for people who think they don’t like blue cheese. Shop Dorset Blue Vinny The Wine: Baccolo Rosso is an Appassimento from the Veneto district of Italy – grapes are partially dried to concentrate flavours, creating a wine with rich dried fruit character, gentle sweetness, and velvety texture.
