New Potato Warm Salad

About the Recipe

Who doesn't love freshly dug potatoes straight from the ground on a hot summers day? Add fresh mint and you have Lensomy (unconditional love) right there wafting through the kitchen bringing outside, inside , stimulating taste buds and childhood memories all in one heavenly fragrant hit!
Fresh, fragrant and oil are the key elements to this dish to turn a heating, drying vegetable into a more gut friendly digestible version.
This Tarka element can be used to liven up any dry dish like lentils, rice, mashed potatoes or even pasta, I also use it in the colder months if I fancy a salad.
This dish can be served as a main meal with a fresh green salad with edible flowers on top with Alfalfa Sprouting Seeds for crunch and a chickpea Hummus.
Delicious especially when eaten outside in the garden or you can pack it up and take it to the beach or any alfresco occasion. Wonderful as a side to a barbecue or any gathering alongside a protein main dish.

Ingredients

  1. 2lbs New Potatoes (as organic as possible pulled straight from the ground or as fresh as you can get)

  2. 1 tsp Pink Rock Salt

  3. Handful of chopped fresh mint, chives, wild garlic or garlic chives mixed of whatever is in season and you have at hand. Snipped Spring onion tops (the green not the bulb) can be used.

  4. Water

  5. Glug of good oil (Olive Oil, Hemp Oil, Truffle Oil)

  6. Tarka

  7. 1 tbs Ghee

  8. 1/2tsp Cumin Seeds

  9. 1/2tsp Black Mustard Seeds

  10. 1/4 tsp Ground Turmeric

  11. tip of a tsp of Asafoetida (Hing)

  12. pink rock salt & Black pepper to season



Preparation

  1. Firstly dig up the potatoes! or second best thing is buy locally grown potatoes from a good source that you know have been grown organically or in good quality soil without nasties.

  2. Give your potatoes a good wash and scrub with clean water and remove any eyes or bad bits (THE BITS THAT CAN GIVE YOUR DIGESTION GRIEF) pop into a pot and cover with filtered water.

  3. Add salt and boil(approx. 15 mins) until a Sharpe knife can prick the centres easily before they start to fall apart.

  4. Turn heat source off and drain potatoes until dry and then put a side with lid on to rest.

  5. Chop up or snip with scissors your fresh mint and herbs of choice and throw into the resting potato pot.

  6. Add a glug of oil

  7. Season with freshly ground black pepper & rock salt

  8. Mix with a wooden spoon

  9. Put lid back on and leave to rest.


Tarka (Digestion Aid)

  1. In a small Sauté pan/frying pan (metal or stone wear best) put on the heat on med-high.

  2. Add 1 tbs of good quality Ghee and melt

  3. Add the Cumin & Black Mustard Seeds to the hot oil and when they start to pop and spit lift from the heat( take care not to burn or the digestion aid becomes toxic and you must start again so pay attention) immediately!

  4. Add the ground spices of Asafoetida (Hing) and Turmeric and swirl until mixed

  5. Lift lid to potatoes and pour Tarka on top and you should hear a satisfying sizzle!

  6. Mix , add lid and rest until you are ready to serve.

  7. Squish with Lime or Lemon if you wish and season to taste.
