A pure vegetarian cheese made from pasteurised cow's milk, it is matured for at least nine months or sometimes longer to achieve the correct texture consistency. When young, the texture of this cheese ranges from moist to smooth transcending to concentrated and flaky when well aged. Because of its firm texture, it is often compared to a French Beaufort. The cheese has a fat content of 45%.

Because it melts well and has a great texture, Heidi Cheese is ideal for cooking, grilling or using in a fondue, soufflé or quiche. A ripe and crisp wine such as Chardonnay will pair well.
